The grapes are whole berry fermented in small batches, occasionally plunged by hand, and after extended skin contact, the wine is gently separated via basket press and then decanted into French Oak barrels (10% new) to develop the complexity and richness that Cabernet Sauvignon is renowned for.
Our 2016 Cabernet Sauvignon abounds in the rich dark fruit characters with hints of mulberry, blackberry and black currant entwined with the soft tannins which carry through to the palate.
The vibrancy of this youthful wine will allow enjoyable early drinking, but the structure and balance will reward careful cellaring.
Food matches include: red meats (consider venison and kangaroo), chocolate and berry deserts, and blue cheeses.
